Server storage space for images

How much, if at all, do I need to worry about wasting space on the server by uploading a screenshot, realizing something was wrong with it, then uploading a new, corrected version?

just mark the old image for deletion.

"Deleted" images aren't actually deleted, it's an anachronism of the wiki software.  Don't worry, I have plenty of space for the wiki and will provision more if necessary.
