Weaving comes natural to a people that braids their beards, plus they did discover knitting but decided that is just a connection of loose loops, unraveling at the most inopportune moment (just when you punched the menacing spikes of cut microcline through it), so they prefer socks made from cloth rather than being knitted.

Why didn't they invent / discover naalbinding? It does not have the weaknesses of knitting.

Had to google "naalbinding". Dwarves have not invented neither knitting nor knaalbinding for a simple reason: the very idea of making entire clothes out of raw thread instead of fabric is considered undwarven and blasphemous.
