Start naking a new set of tombs with coffins :-)
Close all the doors.. elefants are unable to open them.

If you prepared properly, you could have trapped them all and trained them into an effective elephant-army.

If you MUST fight them, try rounding up a few marksdwarves. After a few bolt hits the elephant's rolling in pain on the ground looking rather pathetic. Just my $0.02.
