3 dogs, 2 female and 1 male.
train 2 into hunting dogs, one into a war dog and then wait a year or so, till you can slang puppies by the crateload to any merchant that comes through

One breeding pair dogs.
One breeding pair cats.
One male and two females of every type of poultry. This is probably overkill, but I like to provide variety in the diet of my Dwarves.
I was taking one male and two females each of rabbits and cavys, but I am not getting anything but skulls from butchering them so I probably won't bother with them in the future.
The only other animals I would consider at this time is sheep, pigs, and goats. Everything else eats too much.

I embarked with a pair of Giant Rats (Genesis) that I modded to be trainable and 2 hens and a rooster. The hens were just for the eggs but after 5 years without chicks I've butchered them.
