Just about anything from the Kirby series, especially

http://www.youtube.com/watch?v=sdvPCvk2xLU

and anything arranged by this guy

http://www.youtube.com/watch?v=UsdZ8HBCEeY

Also, I personally think that

http://www.youtube.com/watch?v=201BeAsCCn4

from Tales of Symphonia is very underrated, possibly because in the actual game it's barely audible over the normal battle sounds.

On the more... eccentric end, there's the stuff by this guy. I personally love it, but a lot of other people I know can't stand it.

Note that he also does anime music and some original stuff as well.

Chaos Gate had very good music, it helped a lot to build the ambiance of the various missions.
my favorite was this one :

On the subject of remixes, have some from this guy, and another one (from the same guy).

Looking for Kirby? Have this.

E: Second link was wrong, although that was nice too.

i am a pretty big fan of the NieR OST atm...
I LOVE the NieR OST. Cold Iron Coffin still sends chills up my spine.

Oh geez. You guys NEED to listen to this one.

Journey - Apotheosis
Journey's OST fit the events of the game amazingly. One stand-out moment was the sand-surfing sequence.

Since I'm listening to it right now, I'll throw out Keep The Flag Flying. Great theme for a great rivalry (well... sort of).
Actually, anything composed by Ishiwatari to a varying extent, but that list would get a bit too long.

I love Suck a Sage. It still hangs around my playlist at times.

His work is BlazBlue is great too, but I remember getting sick of Nu's theme because it kept playing in online lobbies. Oriental Flower stands out for me for some reason, I think it's because of the wah and bass. I also like Condemnation Wings, dunno why though, I just like the whole violin and guitar thing I guess.

This, a thousand times.

Listening to Chipp's theme just makes me want to play the character badly.

Various stuff:

Descent 2 - Cold Reality
Descent - A Big Problem

Mechwarrior 2 - Silent Thunder
(I'd pay for a proper orchestral arrange/update of the Jade Falcon theme...)

Ace Combat 4 - Megalith

Frozen Synapse - Triumph

A different version of the Rez boss rush theme
(I think this one is actually the original track, prior to being adapted to the game. Definitely better than the ingame version as far as I'm concerned)

KoF2k - Ice Place

Unreal - Skytown

Shinobi - Red Blade

Good gods, I could list songs forever. In no particular order:

The Sun Rises - Ōkami

Baba Yetu - Civilization IV theme

A Full Moon in Garoh - Golden Sun
Venus Lighthouse - Golden Sun
Felix's Battle Theme - Golden sun
Damn, those games had amazing soundtracks, those are just a few of the amazing songs.

Undiscovered Waters - Aquaria

3 Cans Later - Iji

Tallon Overworld - Metroid Prime

Then there's the Nintendo classics that have gone through so many versions it's crazy, of course; Gerudo Valley, Zora's Domain (although those are orchestrated so it might be cheating), Mute City, The Star Fox Theme,  etc.

Edit: I came across a comment in one of the youtube videos saying something along the lines of "Games are judged by their gameplay, but remembered for their music". Looking back, I think there might be something in that.

I am a bit dissapointed Dancing Mad Haven't been mentioned here.
It's the most epic end boss theme of all the Final Fantasy franchise ever!

edit: oops, wrong one.. as epic as it is, it ends too abruptly.

Needs more robots in here. Super Robot Wars has both excellent remixes of songs and awesome original ones.

Lion - Super Robot Wars Z2 Saisei-hen/Macross Frontier
Sorairo Days/Sky Blue Days - Super Robot Wars Z2 Hakai-hen/Tengen Toppa Gurren Lagann
Colors - Super Robot Wars Z2 Hakai-hen/Code Geass
Ignited - Super Robot Wars Z/Gundam SEED Destiny
Just Communication - Super Robot Wars Z2/Gundam Wing
Love is Far Away - Super Robot Wars Alpha 3/Dancouga
Edit: Nostalgia bonus go.
White Reflection - Super Robot Wars Alpha Gaiden/Gundam Wing

And if those don't count, did I mention they have a ton of amazing original songs made just for the games? Because they do.

Burning Red - Super Robot Wars MX
Wild Flight - Super Robot Wars Original Generations
Over the Time Flow - Super Robot Wars R/Super Robot Wars Original Generations
Another Time Diver - Super Robot Wars Alpha 3
Everywhere You Go - Super Robot Wars Alpha
Flapper Girl - Super Robot Wars Alpha Gaiden/Lord of Elemental
Neppu! Shippu! Cybuster - Super Robot Wars Alpha Gaiden/Lord of Elemental
Shinin' Heart - Super Robot Wars K

Other than GIANT ROBOTS FIGHTING OTHER GIANT ROBOTS, the instrumental remixes of existing songs and new songs they create really make the series enjoyable.
