So... would occultism and alchemy amount to fashion trends? :P

You could say so. :P

Complete with alchemists calling occultists 'jumped up whippersnappers' and occultists calling them 'crotchety old-fashioned seniors'.

I wonder... would the virgin sacrifices used to bind Demons Run have been a representation of the trends at the time? Had it been in the 1000-1100s, would they have instead chucked random, vaguely magical materials at her whilst trying to use the economic power of philosopher's stones? Were it the 1500-1600s would they have tried to conjure infernal power to restrain her? In the later nineties, would they have tried shoving her into a television and having her bicker with her shadow whilst they gathered a bunch of psychiatrists of counsel the two?

Change the latter to 'waited until midnight and then shoved her into a tower full of manifestations of humanity's negative emotions' and that might actually be hilarious enough to be canon.

There's always trends in magic, usualy regionaly I'd reckon. I mean, native americans summoned spirtitual totem animals to enhance their body with abilities corresponding to that animal (or so I assume). I'd reckon nobody in the USA really cares for that kinda magic anymore.

Regional trends are somewhat lesser than global, which is what I discussed :P
Although you could kinda wrangle totem animals into occultism...

I think before the modern age of globalisation, there haven't been many global trends in magic

So, has anyone tried wrangling totem animals to help speculate on the stock market with the assistance of general Jungian psychoanalysis of the major players involved in order to make the economic profit required to alchemical power an infernal ritual?

I am sure the native americans who found their totem animal was a squirrel became too depressed to ever care about learning how to use it for magic
