I'm pretty sure Applejack can cause a lot more destruction if she loaded the cannons with apples.  After all, there was that one time where two characters got offed by a Thermonuclear Muffin Explosion...

I think that might have been a different fight.  I'm pretty sure the battle with the Mongols was ended by a huge Muffin bomb.  Although I think Muffins did kill Darth Vader too
