I disagree a bit with you on the Saluki, they're common enough that they'd be reasonable to include, since they are more popular than greyhounds. Your choice though!
I also did a bit of looking and I picked out a few interesting breeds just in case you're still looking to add more:
The Komondor, which are basically large dog-shaped carpets. It'd be pretty reasonable to allow them to be sheared.
The Pekingese, another from the toy group, they're basically a protective floof.
And lastly the Bouvier des Flandres, an incredibly active and intelligent work dog that also performs quite well as a watchdog.
