I think that what we actually want is a "pasture is depleted" message, because that's why most of the fights start and that's also when action's needed. Of course, automatic pasture cycling would be even better, but that's probably just a dream.

Assign a dwarf a job of Rancher who's task is to move animals around pasture zones that are active. A pasture becomes inactive once depleted and takes a manual Set Active to re-enable it's use. Each pasture is assigned much like a stockpile of what animals can go in the pasture. The rancher handles the task of moving the livestock to appropriate pastures as they deplete and are marked active.

That is a very good idea!

Well, if there's only grass in a tiny portion of the pasture because they ate all the rest, then they'll bunch up in that portion and start getting angry from being too crowded.  Pretty simple, really.

Perfect... perhaps the friendly Farmer could be given a job to tend to the pastures, cleaning them up (no need for that, but hey, gotta do something) and also fertilising/planting new grass.

Wouldn't "Rancher" just be a proffesion of 'animal caretaker'? You could even build a ranch for a family.  Soil should be pottable to build these ranches deep inside the fort with a very dwarvenly layout.

It might be nicer to have the ability to set a threshold of grass at which the pasture is re-enabled automatically. Could be done through a manager screen (Livestock manager/Ranch Manager...)
