Except that that doesn't work unless it's on a "it works or it doesn't" basis. And even then the GMs have to be involved for balancing.

Keeping characters from being tied up so much in the main thread while they wait for results, providing a database of past crafting openly for later review and such, actually making crafting more useful (because you can just ask OOCly instead of having to waste time IC...)

I jist feel like it'd work better than the current 'everything gets buried under incessant posting and DCs are often never stated'.

What irritates me about crafting is generally that it renders the point of specialization useless. If someone's a glass cannon, they can just craft shit and become both ridiculously tanky and strong as fuck.

I mean, we can balance it out as GMs, but then you have people complaining about crafted items being weaker than loot.
