What are the pros and cons of spears, pikes, and knives?

Pro
Their stabs have a low contact area, which gives them a good piercing ability.

Con
You may not want to use their blunt attack, since it isn't as effective as the attacks of hammers or maces.
Due to their low contact area, their attacks are unlikely to sever limbs. This can be a problem when facing creatures that don't bleed, breathe, or think.
Pikes have a size requirement to use them with one hand. You can use them with one hand if you don't fit the requirements, but you will get penalties. I'm uncertain of how severe they are though, so it may not be problematic.

I haven't really used knives or daggers much, but they have effective stabs due to their small contact area.
I meant why would I choose one over the others.

Personally I would choose a blunt and an edged weapon.

I normally go for a sword or axe for organic targets and a warhammer for inorganic.

Swords can stab (pierce) or slash (good for chopping bits off). Axes can only slash and spears/pikes only stab.

Knives can slash as well as stab. My adventurers often roll with a spare knife for emergencies.

How do you get specific people to stop following you, like a companion you no longer want?

No.

Try abandoning him to a alligator or something slow and dangerous,you should be faster the, the creature but the companion is too dumb to run away.

If I recruit lets say a surgeon or suturer would they be able to work like a field doctor?
or if i recruit a hunter/trapper would they be able to catch wild game for food?

No,fast travelling heals all healable wounds any way.

Sort of,all companions will try to (ineffectively) shoot or stab all the wildlife they see,which is how you abandon them to something slow and dangerous.

It may take a few seconds game time?  I think it may have happened occassionally in prior versions, where they dont always immedietely flip out.
